Grab a bite to eat with a cocktail at Oven and Shaker bar and pizzeria in Portland’s always-lively Pearl District. Oven and Shaker is the result of a perfect culinary marriage between six-time James Beard nominated chef Cathy Whims, restaurateur Kurt Huffman and one of Portland’s finest cocktail artisans, Ryan Magarian. At the bar, you’ll find whimsical cocktails like the Louisiana Handshake, which combines Old Overholt whiskey, freshly pressed lemon juice, simple syrup, Peychaud’s bitters, Angostura bitters and absinthe mist. Or, go for the Corleone, with seedless green grapes, Clear Creek Grappa di Sangiovese, lemon juice, simple syrup, Regan’s No. 6 Orange bitters and Aviation American Gin.

Oven and Shaker’s sleek dining room is long and dark, with a bar running the length of the room and both communal seating and individual tables. The room prioritizes style over comfort and caters to a crowd that does the same; you’ll probably be seated too close to your neighbor, but at least they’ll be good looking.

Ryan Magarian is bringing fruity back. Years before bartenders were called “mixologists” (a.k.a. the 1990s) and whiskey was a local obsession on par with pork belly, locals lined up for playful, fruit-forward cocktails at places like Oba in the Pearl District, one of Magarian’s early shaking grounds.

And now, a peek inside the pizza-meets-cocktails collaboration Oven & Shaker, the hotly anticipated project by Nostrana’s Cathy Whims, ChefStable’s Kurt Huffman, and Aviation Gin’s Ryan Magarian. According to Magarian, the 2007 film The Assassination of Jesse James by the Coward Robert Fordinspired the look of the 3,200-square-foot space, which features an exposed-wood wall behind the sprawling (45-foot-long) bar, wood-framed giant wall mirrors, and a room-length booth backed by (you guessed it) more wood.

This week I went to the preview dinner for a new restaurant here in Portland called Oven and Shaker. The shaker part of the equation is the brain child of Ryan Magarian, a successful Portland bartender who is one of the creative forces behind Aviation Gin.
